Syllabub and cherries |

A solid syllabub is a delicious dessert in its own right but with cherries it is absolutely wonderful. Preparation Time: 15 Mins
Total Time: 2˝ Hrs Ingredients For 4 servings… 300 ml Cream - double ˝ Lemon - juice of 1 Lemon - zest of 50 gms Sugar - icing 75 ml Amaretto 50 gms Cherries - black, sweet - pitted, chopped 4 Amaretti biscuits - crushed Method Put four small glass cups or bowls in a fridge to get cold. In a large bowl put the double cream, lemon juice and half the zest. Sieve in the sugar and whisk until there is a soft, almost runny, peak. Fold in the amaretto. Put a quarter of the cherries into each of four cups or bowls. Put the syllabub mixture on top, on top of that add the crushed biscuits and sprinkle on the remaining zest.
