This barbequed grey mullet, has delicious Greek flavours.

Ingredients

For 2 servings…

1                    Grey mullet  - scaled and cleaned          

2 sprigs            Rosemary  - chopped roughly  

3 cloves            Garlic  - sliced thinly  

                     Olive oil    

                     Pepper      

                     Salt          

Method

Wash and dry the mullet.  Cut the fish three or four times on both sides.

Fill the fish with rosemary and garlic and put any leftover rosemary and garlic inside the slashes on the fish skin.

Brush olive oil inside and all over the fish and season with salt and pepper.

Cook the fish on a barbeque for about 5 minutes each side.

Serve immediately.

Serve With

          Lemon wedges

          Sautéed potatoes

          Green salad

Variations

Instead of barbequing the fish, it can be cooked under a medium grill or in a griddle pan for about 10

minutes on each side.

          A dry white wine.
