Pan-fried scallops with honey lime marinade |

This is an interesting, but very satisfying starter dish with a fusion of flavours from the Mediterranean and Far East. Preparation Time: 10 Mins Cooking Time: 14 Mins Total Time: 25 Mins Ingredients For 4 servings… 12 Scallops - sliced in half, horizontally 1 tsp Salt 110 gms Tagliatelle 3 tbs Olive oil 1 tbs Soy sauce - light For the marinade 3 tsp Honey - runny 2 Limes - juice and grated rind of 1 tsp Olive oil 1 Chilli - dried, hot, small, chopped To garnish Coriander leaves Method First make a marinade. Whisk the honey with the lime juice and zest and 1 teaspoon of oil. Add the chilli and stir together. Place the scallops in a shallow dish. Pour over the marinade, cover and chill for 15 minutes. Bring a large pan of salted water to the boil and add the pasta and cook for 5 minutes. Drain and keep warm. Heat the remaining oil in a frying pan over a medium heat. When hot, add the scallops and sear for 1 minute or each side. Tip the marinade into the pan and allow the juice to bubble and reduce. Add the soy sauce and stir. Divide the linguine between four warm bowls and top with the scallops and sauce. Sprinkle over the coriander. Serving. Variations In place of the tagliatelle, linguine, spaghetti , bucatini or another pasta can be used. Wine recommendations An aromatic white wine.
