Some of the best calf’s liver recipes are where the liver is cooked with orange.  This recipe meets that expectation.

Total Time: 25 Mins

Ingredients

For 2 servings…

3 tbs               Flour        

¼ tsp              Mustard  - powder   

                     Pepper      

                     Salt          

4 slices             Calf's liver  

1 tbs               Olive oil    

15 gms            Butter       

1                    Shallot  - chopped very finely   

1 clove             Garlic  - chopped very finely    

1                    Orange  - juice and grated rind of          

100 ml             Stock        

1                    Orange  - cut into wedges       

Method

Blend the flour with the mustard powder, salt, and pepper and coat the liver slices with it. Fry them in a pan with oil and butter for 3 minutes on each side.  Remove the liver from the pan and keep it warm.

Sauté the shallot and garlic in the pan and add the orange rind, the orange juice and the stock.  Cook the sauce for a couple minutes and add the orange wedges.

Season the sauce with salt and pepper and pour it over the liver.

Serve.
