Brussels sprouts cooked with chestnuts is a timeless pairing that balances earthy sweetness with gentle bitterness.  The sprouts become tender and lightly caramelized while chestnuts add a rch, nutty depth and subtle sweetness.  Together, they create a dish that feels both rustic and refined, rooted in seasonal

Ingredients

For 2 servings…

450 gms           Brussels sprouts  - prepared    

                     Salt          

20 gms            Butter       

110 gms           Chestnuts  - cooked and skinned

                     Pepper  - freshly ground, black 

Method

Cook the Brussels sprouts in about 5 cm of boiling salted water till tender (about 15 minutes) - stir several times

Melt the butter in a pan and without allowing it to brown.  Add the chestnuts - breaking them up into pieces as they fry for 2 minutes.  Add the Brussels sprouts and toss them with the chestnuts.  Cook for 2 minutes more.  Season highly with pepper and salt and turn it all on to hot dish and serve.
