This recipe for garlic potatoes comes from the foothills of the Pyrenees. The potatoes are essentially stewed. Apart from garlic, the other key ingredient is goose fat. Very South-West France! Preparation Time: 10 Mins Cooking Time: 30 Mins Total Time: 40 Mins Ingredients For 4 servings… 6 cloves Garlic - crushed 2 tbs Goose fat 680 gms Potatoes - peeled and sliced thinly Pepper Salt Method Heat the garlic in the fat in a heavy-bottomed casserole with a good-fitting lid. When the aroma of the garlic becomes enticing (but do not let it burn), add the potatoes. Turn them in the fat to distribute the garlic. Cover and cook slowly for 30 minutes - checking from time to time to be sure they are not sticking. If they do stick add a little more fat. The potatoes should not brown but gently stew. Season them at the end and serve hot.
