This recipe produces deliciously crispy potatoes with a Greek flavour.  Excellent with fish, meat or poultry.

Preparation Time: 10 Mins

Cooking Time: 35 Mins

Total Time: 45 Mins

Ingredients

2 tbs             Olive oil      

1 clove           Garlic  - bruised but kept whole  

200 ml           Stock  - chicken          

200 ml           Water         

˝                 Lemon  - peel of         

                   Pepper  - freshly ground, black   

2 tsp             Oregano      

1                  Potato  - large, cut into 3 cm chunks         

˝ tsp            Salt

To garnish

                   Parsley  - chopped      

Method

Heat the 1 tbs of olive oil in a saucepan and gently sweat the garlic until it releases its aroma but has not coloured.  Add the stock and water, the lemon zest, salt, pepper and half of the oregano.  Bring to the boil and simmer gently for a few minutes to infuse the flavours.  Add the potatoes, return to the boil and simmer gently until the potatoes are just under-done – about 20 minutes from adding the potatoes.  Drain in a colander and allow to steam dry.  The potatoes can be kept aside for a few hours.

To finish the potatoes, heat olive oil in a sauté pan.  Meanwhile toss the potatoes in a dusting of salt, pepper and oregano.  Shallow fry the potatoes, turning regularly, until they are golden-brown and crisp on the outside.  Drain on kitchen paper and keep warm in a low oven.
