This is an extremely good potato recipe from the Arden – particularly if you like the taste of juniper berries.  It is excellent services with meats, game or grilled pork chops.

Preparation Time: 10 Mins

Cooking Time: 20 Mins

Total Time: 30 Mins

Ingredients

For 6 servings…

60 gms            Butter       

1 tbs               Olive oil    

450 gms          Potatoes  - peeled, shredded, rinsed and drained    

                     Pepper  - freshly ground, black 

                     Salt          

6                    Juniper berries  - crushed       

Method

Heat the butter and olive oil together in a heavy frying-pan over a gentle heat.  Add the potatoes and let them stew rather than fry in the butter.  Seasoning with salt and pepper and add the juniper berries.  Turn over the potatoes from time to time.  When they have amalgamated into a mass and are tender, turn them on to a hot flat dish and serve.
